I found this recipe on a low-carb forum when Googling different low-carb websites--it sounds crazy, but the end result is amazing! To quote the original post: "This makes a wonderful hamburger bun, it tastes like a whole wheat bun. It's very sturdy and holds up well with all the juiciness of a hamburger with all the fixings." Note: you may need to add more ground flaxseed/flaxseed meal--the consistently of the "stuff" pre-microwaved should be thick and sort of pasty, like brownie batter, not liquidy.

I've been looking for a way to bake apples and a cake together, and I was inspired by a recipe I read at La Tartine Gourmande. I use almond flour, however you can substitute your flour of choice - the amount of flour necessary may vary depending on the type of flour you use. It came out so moist and delicious, my son asked to have just the cake again, or add other things to it. I can imagine putting raisins and walnuts in the cake, or eating it alone as a pound cake. In any case, this cake recipe is definitely a keeper.

Waffles come out best with a reliable waffle iron. I'm not a huge fan of blog advertising, but when I find something I like or works well, it seems worthwhile to share. So here goes: I love my waffle iron. This waffle recipe is just like my donuts recipe, and you can play with this recipe to lighten the waffle or make it spicy or sweet. And it goes well with a variety of toppings. What are your favorite waffle toppings?


Some waffle toppings:

•real maple syrup

•honey or maple syrup and butter melted on top

•honey or syrup and roasted pecans

•cinnamon, honey and butter melted on top

•Orange honey syrup (melt 3 tablespoons of honey with 1 teaspoon of orange juice)

•Sliced fruit (bananas and strawberries - yum!)

•Warm fruit, such as apple or blueberries on top are heavenly

•Ice cream or frozen yogurt

•Fruit syrup plus yogurt

This is good. (My husband says that "good" is not an adequate description of this dish. He says, "I took one little bite, and it was phenomenal!") I am using it as a substitute for my usual sweet potato dish for Thanksgiving. I am also having butternut squash in my winter vegetable medley, so I'm skipping the pumpkin pie and opting for apple cobbler instead.

Coconut flour is easy to bake with, and if you have a nut allergy, it is a great gluten-free substitute for nut flours like almond flour. It's low in carbohydrates and high in fiber.


I purchased my latest batch from Tropical Traditions, however coconut flour is showing up all over the place. Bob's Red Mill offers organic coconut flour.

I finally received the donut baking pans I ordered from Amazon, and so far, I love them. I can now make full-size, cake donuts with a myriad of flour types. This recipe is for vanilla donuts using coconut flour. This recipe can also be used to make vanilla cupcakes - no alterations necessary.

Aaahhh Casseroles.......the comfort food of childhood. My mom was an expert casserole maker. Give her a can of Tomato, Cream of Mushroom or Cream of Chicken soup and she could create a meal for our family of six out of practically anything (just so you know mom, the Chinese one was my favorite). This recipe is a bit different, as casseroles usually include potatoes, rice, or corn. It took me awhile to come up with using zucchini as a substitution and it works very well. The trick is to make sure all the ingredients are as dry as possible.
