Cookbook creator says: This chili recipe is my quick-dinner go to. My whole family loves it and I love the nutritional value! I forgot to mention to add 16 oz water and if you want to spice it up you'll want to use the cayenne pepper pack in the chili box and a jalapeno pepper if you have one on hand!

Cookbook creator says: We love this salad! It is great over a bed of lettuce with a squirt of lemon or on a slice of nice hearty whole wheat bread. Non-fat yogurt makes it lighter than the traditional waldorf salad. I added some chopped pecans for a little crunch.

Cookbook creator says: Plan to soak the beans the night before and prep is a snap the next day. Do it in the crock pot all day or on the stove in a little over an hour. So delicious! I doubled the batch, froze some to take camping with us next week, brought some to a sick friend and will eat it for my dinner tonight.

Restaurant-style hot and sour soup, minus the sugar, corn starch and MSG. You can add whatever other vegetables you like (hot and sour soup usually has mushrooms but I don't like them). I usually add bean sprouts and brown rice and serve it as a complete meal.
