My family loves pasta salad for picnics. Since I haven't been eating pasta as part of my diet, I would just make it and do without. Well, for Labor Day, I realized I didn't have pasta and decided to use some quinoa I had in the pantry. This is tasty, nutty and HEALTHY!! Your family will most likely NOT miss their pasta. Add green and red pepper, chopped onion, small diced broccolli and cauliflower, cucumber and any garden fresh veggie to make even better!

This is from a weight watchers meeting back in 1996. I make this a lot for lunches with friends. Sometimes I'll substitute shrimp for the chicken. Or I'll add more veggies, such as red bell peppers or snow pea pods (add pea pods just before serving. They lose flavor and color if left long in marinade).

Spice up your pasta with this delectible dish! I made this with full calorie mayo but it would prolly be even less calories with a lighter mayo. The chipotle peppers you can put more or less depending on how you take spicy foods.

Delicious Taste of Home recipe. Very yummy! It calls for regular pasta in the recipe, but I like wheat pasta myself! Also this recipe calls for fat free Italian Dressing. I use my local fav but you can use whatever floats your Italian dressing boat!
