Cookbook creator says: I added black beans and used low sodium chicken broth instead of water. Also try to use brown rice instead of potatoes once,it gives a different flavor. I have also added cajun and creole seasoning last hour of cooking. Beef cubes are good too. Just experiment.

This recipe was featured on Dr Oz. The only thing changed was that I used three tablespoons of margarine with canola oil instead of 2 tablespoons of margarine and 1 tablespoon of canola oil.
