Perhaps it’s the lime dressing, which infuses the dish with flavor without overwhelming it in goo. It could be the quinoa, which has a distinctive nutty taste far superior to white rice and its lamer brethren. Or, maybe it’s the tomatoes, black beans, and scallions, which reminded one friend of "the insides of a really good burrito." The original recipe comes in at over 700 calories!!! I found a recipe that used applesauce in place of the oil. I lightened it further using skim milk, egg substitue and sweet n' low. Came out very moist and I dusted the top with 10x sugar for the little "extra", though whipped cream or a little bit of icing would be good also...or you may enjoy just plain! I remember Mom & my Grandma's making this attractive recipe. Probably a Purdue Extension Club recipe. I omitted the salt. I wasn't allowed to help make it until I was old enough to use a knife - probably when I was in college. Some prefer to add vinegar or an Italian salad dressing. We just ate as is. Good for carry-in picnics, etc. If you have access to tomatoes of a variety of colors, it is pretty. Submitted by 60SIXTY Carbs: 9.1g | Fat: 0.5g | Fiber: 2.3g | Protein: 1.8g | Calories: 41.3

This is a smoothie recipe that needs some refining, to be honest. I think the taste was wonderful, but the consistency could use some work, you might want to try carrot juice, instead of carrots. Submitted by SCARLETMOONOWL Carbs: 69.2g | Fat: 3.4g | Fiber: 9.4g | Protein: 8.7g | Calories: 328.4

This is a tweaked recipe shared by a Spark friend. It is also my first Spark Recipe, so go easy on me. The nutritional info doesn't match exactly to what I have, but it's pretty close. These muffins are fantastic and I recommend you have plans to freeze or share them so you don't eat them all. Don't be afraid of the whole wheat flour. Due to the bananas these come out moist and delicious, not dry and compact. Submitted by LADY_JOSIELOT Carbs: 13.1g | Fat: 1.8g | Fiber: 1.7g | Protein: 1.8g | Calories: 70.8

Making and eating home-made baked goods for breakfast can be heart-warming and yummy, but can it also be heart healthy? Yes! I am always thinking of ways to cut out the cholesterol. By eliminating butter and eggs in these Heart Smart Carrot Muffins, I offer you a good basic recipe to which you can easily add your own twist. These nutritious muffins use yogurt and whole wheat flour to get their great texture. In addition to the yogurt, other ingredients include fats that will do your body some good -- olive oil and nuts! You can vary the recipe by using your favorite fruits, nuts, and even another vegetable. I used carrots because I had too many in my fridge, but note that they are also an excellent source of vitamin A and fiber. The walnuts I used are loaded with omega-3 fatty acids, and those raisins are full of mineral rich anti-oxidants.
