Cookbook creator says: Much spicier than I expected, but very tasty! I made this with red onions and fresh tomatoes because its what I had on hand and it ended up being very colorful! I froze the leftovers and look forward to tasty meals in the future!

Cookbook creator says: A great summer dish! I use it for open face sandwiches. The recipe called for much more mayo than I'm used to, but instead of cutting back I added more veggies! This already tasty sandwich filling is awesome with the addition of half of a cucumber.
