I found the original recipe online on the NY Times website. They call their version Red Lentil Soup With Lemon. When I went to make it for the first time I messed up with the spices and added curry powder instead of cumin. When I realized my mistake I added the cumin anyway. I also omitted the finishing steps because I didn't have any lemon on hand. I just served it after hitting it with the immersion blender. The soup turned out amazing and it's been a favorite ever since. Submitted by BELISANA
This is a very nutritional soup, delicious on a cold winter day. Low fat, low cal, low carb, and rich in potassium and fiber. Serve with a whole wheat dinner roll or 9-grain bread.Submitted by CONNIE48036
I just made this up with the ingredients I had on hand. I think it turned out pretty tasty.
I didn't realize how healthy it was before I entered it in the recipe calculator- 19% of your daily iron, 8g fiber, and 10g protein, all with only 211 calories. Not too shabby.Submitted by TAILSFOX
