Hollandaise sauce is a wonderful naturally low-carb topping for omelets and quiches as well as Eggs Benedict, broccoli, asparagus, Veal Oscar, and many other foods. Making one the traditional way (double-boiler) is really not necessary. Turned out delicious! Only about 15 calories per mushroom, depending on how large of a mushrooom you use. The filling comes out firm even though it looks a bit runny as you are filling the caps.
