Cookbook creator says: Yes, you can roast a turkey! This is a great recipe (be sure to read the comments listed below). Instead of the olive oil, spray the turkey with olive oil spray. Add a quartered apple and onion to the cavity (but don't eat them - they are just for flavor and moisture).
