They taste sinful, but are so good. These aren't "mini" cookies. I replaced most of the oil with pureed pineapple, and a bit of yogurt. They are soft, fluffy, and really good out of the oven. They taste good the next day, too. They are pretty "cake-like", and will not crumble after they cool off like most GF cookies. Good for school lunches, trips & picnics. :)

I got this recipe many years ago from my Mother. I'm guessing on how many servings. If you have a large group of people I add 2 cans of pineapple each, cottage cheese and coolwhip.

This is so simple... and great for calorie control... and so nutritious and delicious... I layered the Angelfood cake on the bottom of the pan...topped with Strawberries, etc.. and it makes a pretty dessert that my family really enjoys...
