Spicy Lemon-Lime Chicken Fajita Filling

Really good chicken fajita filling. Adapted from a fajita recipe that used tequila where I use teriyaki. I feel better using this 'cause I know what spices go into it, therefore no MSG like some of the packaged fajita spice mixes. (For the record, since a lot of the liquid is drained from the chicken after it marinates, I've used only half portions of the marinade juices to calculate calories. Basically, you're covered.) :) Original recipe used generic measurements, but I weighed my ingredients this time, and used those to calculate calories. I've included my gram weights below if you find them of use! :) [Created 2007-12-19.]

I had left over taco meat along with refried beans, tortillas, diced tomatoes, green onion, salsa and cheese and wanted to make something interesting with the left overs.

If you don't have left over seasoned ground beef, then you will need to make it before starting this recipe.

This is a yummy mexican inspired dish, I love that the salad is served with salsa, sour cream & guacamole instead of boring old salad dressing. Nice & Low Calories for those Calorie Counters out there!

Cuban Chicken over Spanish Rice

Delicious! I just threw this together last minute and it reminded me of a Cuban dish I had in Navarre, Florida while visiting a friend!
I used up ingredients I had on hand since I couldn't get out to the store because of the snow and for creating this dish from scratch, it was a huge hit with my DH and picky daughter.
