The extra time put into making classic risotto is worth the wait. This version uses quick ingredients and pairs nicely with any meat. It is also hearty enough to be served as a meal on it's own. Could easily be converted to a vegetarian recipe.

I created this dish for dinner one day when I was pressed for time with ingredients I had on hand and it was an instant hit! A low carb delight as is, but you can serve over wide whole wheat noodles or brown rice if you are not watching carbs.

A very yummy vegetarian meatloaf adopted from another vegan blog. I can't find the original to give credit, I printed from my email and have been using that recipe but made a few changes to use what I had on hand. Makes 4 1/2 cup servings. I measure them out with a measuring cup and make mini loaves :)
