ok- the mexican beef and rice was too high in calories for some- so I made it over- for about 1/2 the calories- removed the oil, added add'l 1/4 cup of ff cheese, and a larger jar of salsa kept this from getting too dry. Love Chipotle food? I modeled this recipe off my favorite burrito bowl from Chipotle (Less rice, more bean, all four salsas and guac.) The recipe sounds complex because there are lots of parts, but it is pretty easy to throw together in 20 minutes. Great for larger groups, too.
