Cookbook creator says: I haven't tried this one yet but will as soon as zucchini is in season. I would swap the egg substitute for one whole egg and use olive or coconut oil to cook them in instead of the cooking spray.

I got the idea for this recipe from Elana Amsterdam's book, The Gluten-Free Almond Flour Cookbook. I replaced the agave with xylitol to reduce the carb and sugar load, and reduced overall sweetness a bit. My 12yo son still says this is the best chocolate chip recipe I make, and it contains a lot more protein and fiber than "regular" chocolate chip cookies.
