Tofu is used as a substitute for ground meat in this recipe. If you's prefer a more "meat-like" appearance and texture, freeze the tofu at least a day before making this recipe. Okay, I confess that these taste nothing like fish sticks, but they taste delicious with tartar sauce or cocktail sauce(which was the point for me!). They are really just a healthier, low-carb version of a breaded tofu stick, which would taste great with just about any dipping sauce! This recipe is a combination of two similar recipes that I had in my cookbooks, with some modifications to made them healthier and tastier!
