Cookbook creator says: I varied this recipe by using green enchilada sauce with the spices for a marinade. This eliminates any oil for cooking your meat. You can just put it all in a pan and cook. Adjusted spices plus garlic. Served with the oriental rice recipe and a tablespoon of fat free sour cream. Yum!

Cookbook creator says: partially cooked rice in separate pot added 1tsp of chicken bouillon and 1 scant tbls of chili powder to the rice; when there was just over a cup of liquid remaining, added all to vegetables, cooked approx 20 minutes until rice was al dente to soft, add beans. makes 4-very full 1 cup servings
