DELICIOUS, easy, and now only 214 calories per serving!! This is my modification of a Chicken Tikka Masala recipe on this site. It sounded great, but I wanted to use less oil, didn't want to buy garam masala (when I had the ingredients for it on hand already), added a missing ingredient into the calorie count, and reduced the serving size. Still very yummy!

Really yummy, healthy and rather cheap to make. My husband and daughter love this recipe. It is a spin off of the traditional chicken and rice. I listed portions for serving of 8(food for 2 days), but you can cut down if needed.

Caribbean Pulled Chicken Stew

This is a thick hearty BOLD tasting stew. The ginger gives it a kick and the coconut milk adds a delicious texture and rich flavor. I was apprehensive at first as I wasn't too sure how this stew would turn out but it ended up being AMAZING, everybody loved it and had multiple servings, the pot was empty in no time !!! I promise this stew will not disappoint!

(use homemade chicken broth and you can cut the sodium in half in this recipe)

(for extra protein add a can of chick peas, but rinse well to keep the sodium low)

Soba Noodles, Chicken, and Veggies with Caramelized Garlic Sauce

This dish serves 1, but can easily be modified to serve more.

Some Soba noodles are gluten-free (check package). They are made from buckwheat and metabolize much more slowly than most carbohydrates, which makes them ideal for diabetics and health-conscious individuals. You can pick them up at your local japanese market or health food store.

If you don't have any chicken leftovers on hand, Marinate chicken breast tenderloins or sliced breasts in some sesame oil, chopped up garlic, sake or rice vinegar, sugar, salt and pepper for 4-24 hours. Cook in nonstick skillet.. adding a bit of soy sauce and sake/wine halfway through the cooking.

This sauce can be used on any noodles with just about any vegetables you like. Enjoy :)

This is something that was a hit with my hubby and 3 year old. I took some stuff we had and put it together (I was craving cabbage) I also used low-sodium cream of mushroom soup when I made it, but for the recipe, put down regular (as I think it would help with flavoring)
You may want more or less salt and pepper for taste.

Yummy eggrolls stuffed full of veggies. For lumpia (what I've been told is the Phillipine version of egg rolls) use spring roll papers. We use these as a meal but make a great side or appetizer too!

Here is a favourite recipe of mine, it's packed with nutrients, and really easy to make with whatever veggies or meat you have on hand, or you can leave the meat out for vegetarian fare....

I actually used a cut called "Sandwich Steak" at my grocery store, I couldn't find it on here though, so I put in the flank steak cut.

The bibimbab sauce is actually a red pepper paste mixed with sesame oil, that can be found in most Asian markets (or if you have a really great International Section in your supermarket). If you find just the paste, then add a bit of oil at a time til you get a taste you like :)

I used my steamer for my rice and chopped veggies while the meat cooked, great multi-tasking lol...

The key ingredient for the proper flavour is the sesame oil! I tried to sub different oils, but it just doesn't taste very good, unless it's sesame.

I think the egg is the icing on this recipe, it makes it very authentic! (I lived in South Korea for a year, and ate this every other day!)

This is very filling, if I eat a serving for lunch, it really takes me past that 3:00 Snack Monster, I think because of the protein in it :)

Simple and straight forward, this recipe could be made the day ahead of time, the morning of to save the marinade time. I make two pounds at once, marinade over night, and freeze off in portion sizes the next day while i skewer my kabob for dinner. That way, all you have to do is pull it out the night before and skewer it the next day just before grilling or baking.

I can't take credit for this recipe, as it is originally from Weight Watchers Simply Delicious cookbook. I changed it slightly in that I use boneless/skinless chicken breast in favor of a bone-in variety. Pizza is one of my favorite foods, and the sweet sauce at Papa John's is my all-time favorite. My viewpoint is, if you're going to make it at home, don't make it "just as good," make it better! So I'm remaking a medium Papa John's pie with pineapple, onion and bacon(BACON!!!).
