This is a fresh take on a picnic and potluck favorite. The whole foods make it tasty, filling and colorful. The fast and easy prep is an added bonus!

Give this recipe a sophisticated Greek flair by adding some crumbled feta cheese, or more Italian with a sprinkle of freshly grated Parmigiano Reggiano (not included in nutritional calc.).

Boxed meals save time but not much else. We checked out the nutrition label on a "whole-grain" variety of a popular helper meal. The second ingredient was sugar! That's not going to help one bit. Thankfully, you can ditch the box and create a tasty, economical one-skillet meal in just 20 minutes.
