So moist and full of chocolatey goodness. You'll be amazed this is loaded with zucchini. It adds moistness that is a wonderful balance to the chocolate punch of the dark cocoa powder and 2 types of chocolate chips.

Everyone loves this cake. I make it healthier by cutting the fat with applesauce. I personally do not like to use the artificial sugars; but you could further reduce calories that way.
Also, the original recipe calls for just a half a cup of chocolate chips; but I did the nutritional info for a whole cup sprinkled over the top.

Yummy summertime stone-fruit cake.

This is a combination of two recipes - one from King Arthur Flour (The Baking Sheet Newsletter, Vol. II, No. 8, August 1991 issue) and one from Eating Well (May/June 1997).

Per King Arthur Flour: Upside-down cake is the dessert world's equivalent to everyone's favorite breakfast treat: sticky buns. Just as sticky buns bake in a pool of sugar, butter and raisins, then are flipped over so all that lovely sticky sweetness is on top, so does the appropriately named upside-down cake. Butter, sugar and fruit are arranged in a pan, the cake batter poured over it, and after baking the cake is turned upside down, revealing a moist, sweet fruit topping.

This is supposed to have a mixture of whipped topping and lite chocolate syrup, but I didn't like it so I make it without it. I also doubled the cake and yogurt to make a slightly bigger "cake". I beef up the fiber by adding 1 T of flax too, but I don't always do that so I didn't add that to the nutritional information.
