This was an excellent member-submitted recipe that required very few tweaks. I reduced the oil to one tablespoon, added more herbs and left out the salt. I also added another vegetable: zucchini.

This dish was surprisingly filling. I recommend serving it with a side salad for a vegetarian meal. (You'll never miss the meat!)

TIP:
Use small eggplants--the larger they are the more bitter they are.
