Cookbook creator says: I know there is controversy around fructose - my main reason for using it is that it saves calories and lowers the Glycaemic Index of the cake. However, ordinary sugar can be used and if the evidence starts to suggest it's not wise to use it - I will cut it out of my recipes.

Cookbook creator says: The idea was better than the reality. It needed more variety of spices - not just cinnamon. I'll try again and tweak it a bit more. I needed about double the quantity to make a decent meal - especially as it was mostly veg.
