Easy Muffin Mix and Muffins

A super easy mix to put together and store so you can make muffins easily and for very low cost and calories! I make the mix about once a month and then store it in a big #10 can (the size of a large coffee can) with a lid. On top of the lid I put the directions for making the muffins so that even my children can put them together.

Finally, a strawberry cake that doesn't call for gelatin or pre-packaged cake mix! Yes, I do bake with butter, but feel free to sub margarine if you so desire.

Note about using cake flour: You can use all-purpose flour in place of cake flour, substituting 2T cornstarch for 2T AP flour for each cup used (in this recipe, you will use 4.25 T cornstarch and remove 4.25 T AP flour from the measurements listed). Sift, sift sift your dry ingredients!

This tastes great with a lemon icing, or topped with some homemade glaze made with fresh strawberries, cornstarch, a little Splenda or sugar.

A family recipe that I tweaked a bit. My mother made this with turkey ham instead of turkey breast, but the sodium content when made with turkey ham is much too high. The "stew" is really more along the lines of a soup consistency, but you can thicken the broth with cornstarch if you desire a thicker "stew". Enjoy!
