if you like spicy peanut buttery asian food, you'll like this sandwich.
note: i use LIGHT firm tofu in place of regular firm tofu because it's significantly lower in fat and calories without being lower in protein. it doesn't really taste any different.

Quinoa is similar to brown rice, with a higher protein content. This is a delicious side dish or light meal.

I'm not a big pumpkin fan but this works well and is a great after school protein snack with pita bread, rice crackers (especially salsa flavoured ones) or wholemeal crackers.
