For anyone who LOVES mango, this is a healthy and simple shake/smoothie, bursting with potassium and flavor. But diabetics be warned, it's rich in natural sugars.

This recipe has no oil and is easy to add to for fun! It had 3 tablespoons of melted butter in it but I omit that, although it is tasty with. I like to add a 1/4 cup of water to it to thin it a bit more for our taste. I also add cinnamon and vanilla.

Ines' Banana Nut Bread, or Muffins
Good 3.7/5
(3 ratings)

Adapted Ines' favorite Banana Bread recipe by changing 2 eggs to 4 egg whites; and changing the sugar to Splenda; and changing out 1 cup of white flour to whole wheat flour. Ines always baked in her bunt cake pan. I used muffin pans and made 24 servings for portion control This recipe might have originated with the Purdue Extension office.

Crunchy celery, sweet craisins, and exotic curry powder make this chicken salad a winner. Serve on top of a bed of lettuce or as a sandwich or wrap.

I just whipped this recipe up to use a little leftover chicken I had and to feed my "hungry as a bear" husband some lunch and it was a hit. You may wish to season a little different according to taste.
