From the Kitchen of Camille Engel... My friends and family LOVE this recipe. It is great served alongside chicken or salmon. Serve it as a dip with tortilla chips (or jicama slices for a no-grain healthy dipper.)

A delicious and healthy lasagna. Roasting the vegetables before putting the lasagna together brings out their flavor and gives an added depth to the dish.

Using a mandolin slicer to slice the vegetables makes them the perfect thickness to use as the lasagna "noodles".

I love the combination of the flavors and colors here. If a bit dry try adding some oil and tomato paste to the bean mix. I made a spinach salad with lime-basil dressing to go with. Can try adding 1 egg white to the beans and someone suggested roasted peppers.
