A delicious and healthy lasagna. Roasting the vegetables before putting the lasagna together brings out their flavor and gives an added depth to the dish.
Using a mandolin slicer to slice the vegetables makes them the perfect thickness to use as the lasagna "noodles".Submitted by HRHAIMEE
Beet juice is excellent to break the fast of the night before and cleanse the liver; beets have been used naturopathically to cleanse and support the liver for many years. Rich in vitamins and minerals that include beta carotene, zinc, vitamin C, and chromium, it is no wonder this drink is especially energizing.Submitted by BAROQUE_PEARL
I'm really proud of myself for this one. I used to love getting Mexican Pizzas at Taco Bell. I haven't had one in years. So, I spent a few days concocting this recipe.
Tempeh is a fermented soybean cake, originating from Indonesia. You can find it at your health food store, if you can't find it at your regular grocery store. We aren't vegetarians, but sometimes it's nice to have a vegetarian meal. Helps save on the calories. Tempeh is a great meat substitute. If you chop it up right, it can have a similar consistency to ground meat.
Also, I'm pretty sure the tortillas Taco Bell uses for this are deep fried to make them crispy. I baked mine.Submitted by PISCESWOMAN87
This is a makeover of Cracker Barrel's Chicken & Dumplings. My aunt had created the original recipe which called for 1.75 lb chicken and whole milk. It was always one of my families favorite dinners that I made once in a while on special Sundays. Recently, I decided to try a healthier version of it with lower calories, cholesterol & sodium to see if it would pass the "family test". It did! They couldn't tell the difference. The healthy version of this recipe went down 76 calories, 31mg cholosterol & 1104 mg of sodium per serving.
On a side note, I know some people who use prepackaged biscuit dough to make their dumplings to make it easier but I don't like the taste of the perservatives because it makes the whole recipe taste like it came out of can. There is nothing like homemade!

Cookbook creator says: haven't made it yet, but site critiques recommend deleting turkey bacon due to high fat/salt. Suggestions - turkey slices, turkey sausage... also egg beaters.
These burgers are spiced to perfection. To make them even spicier, you could melt jalapeno soy cheese on each patty and serve topped with salsa.

Cookbook creator says: I lived in Germany for >4 years..... this looks like a good alternative to some of their heavier foods...
