Cookbook creator says: This was something I concocted from my tried & true pizza dough recipe that I use as a base for many breads. This one can be varied, too. Almost any of the "added" ingredients are optional except the Italian herbs, then we'd have to change the name, right?

The title says it all! You can, of course, vary the whole grain ingredients so that it equals about 2 cps. You can also substitute the olive oil for some other, or not use any at all since it has the apple.

Rich in flavor & nutrients, these are adapted from a recipe originally called "disappearing cookies". Very approriate name! These servings are large cookies. Soooo tasty & good for you! Check out the nutritional value.

A great breakfast or light supper food. Add extras if you wish, like raisins, coconut, nuts, etc. Eat plain or with milk.
The original recipe had 1/2 cup oil, 1 cup sugar and 2 eggs, so the calories & fat have been greatly decreased.
Make it chocolate oatmeal by adding 1/4 cup of unsweetened dry cocoa to the mixture!

I created this one night when I was craving something filling, but didn't want high fat, calories, etc.
This may be eaten as is or as a sandwich filling. Increase, decrease or substitute these ingredients with those that suit your taste. The mayo helps hold it all together, which is helpful if you use it for a sandwich filling!

Christmas Night Fruitcake

Originally a Brazilian recipe called Bolo Noite de Natal, but very similar to the traditional American one. I gave it a few healthy tweaks (believe it or not!) and, of course, you can add the kinds & amounts of fruits & nuts you like best. Less butter, sugar, eggs, etc can also be used-depending on your taste, dietary needs & opinion.
This is not a last minute type of dessert to make. It's a fruitcake which requires a bit of time & loving dedication to make, but which just may become one of your favorite Christmas traditions for years to come!
