Cookbook creator says: A little high on salt. Make taco seasoning with salt substitute. Also spritz tortillas with lime juice before baking for extra lime...also helps flavor when reducing the salt. And I'm no fan of re-fried beans so I would double the black beans and leave re-fried beans out.

Nutritionals are for a LARGE 1 c. serving. An absolutely fantastic rice pudding. Full of sweet spiciness from the cinnamon, ginger and nutmeg and creamy soft rice. Delish hot or cold. Chill and top with fresh fruit or eat it hot the next morning for a quick breakfast.

A different way to use apples if you are tired of pie or crisp. Nice a light -- custardy kind of.
