Easy to bake a lasagne tha tastes and looks as good as the full fat version but with about 200 calories per serving. Best of all- you DON'T have to cook the noodles ahead of time! And it's LOADED with 20 grams protein per serving.

I LOVE chicken & dumplings so when I found this I added my own spin to it and lowered the fat and calories. This is the best chicken and dumplings I've ever had which is amazing since I'm never satisfied with my cooking! You can have a full cup of this hearty comfort food for only 284 calories and 3.8 grams of fat! The sodium could be reduced if homemade biscuits are used instead of the canned biscuits, but if sodium isn't a problem this is a very fast and easy way to make chicken & dumplings!

This is my absolute favorite dish from Ruby Tuesday so I had to find a way to make it over. Its called the smokehouse chicken and it is a favorite by many! This delicious dish is high in fat and calories if ordered from the restaurant so I came up with a healthier, guilt free version that has become a favorite in my household!

Roasted Vegetable Lasagna

A delicious and healthy lasagna. Roasting the vegetables before putting the lasagna together brings out their flavor and gives an added depth to the dish.

Using a mandolin slicer to slice the vegetables makes them the perfect thickness to use as the lasagna "noodles".

Absolutely delicious! Who doesn't love potatoes and cheese? These either bake in the oven or can be done on your grill for a dinner time delight anytime of the year. If you don't like the vegetables listed, switch it up with your favorites.

Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals...if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven't ever tried it with regular Italian dressing...let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking...it allows the juices from the chicken to really seep into the dressing.

I got this from the Fix It and Forget It Lightly cookbook. It calls for any diet soda. I actually used Diet Dr. Pepper. I used Kraft Original Barbecue Sauce. Finally, I'm not an onion person, so I skipped them--and used minced onion instead. It was ABSOLUTELY delicious! The only hard part is eating JUST ONE SERVING!

The perfect way to make mashed potatoes for a family gathering. Can be partially prepared aheaad of time and finished the day of the gathering. This is a recipe that I have been experimenting with and tweaking for years. Always a family favorite and they didn't even notice the difference when I re-invented it using low fat ingredients and turkey instead of beef.

The best thing about this meal is how much fun you can have making it. Since it is more of a "stew" I have added all kinds of different vegetables and sometimes even put left over pot roast in with it. Have fun and be creative!

Halloween - Autumn Variation: Make this recipe just as described below but remove the potatoes and add one can (15oz) of pumpkin puree and 1 tablespoon pumpkin pie spice! 1 tsp of ground cumin is always nice also..
