Sometimes the simplest things are the most enjoyable. This dish is very high in Vitamin A, Vitamin C and has good amounts of copper and magnesium! Warning: The cashews contribute nearly half the calories.

Almonds or peanuts would work too and ff you want you could jazz it up a bit with a little freshly grated ginger and a shake of chili pepper flakes.

Cookbook creator says: Made this to have at Thanksgiving. Everyone liked it, I used the pre-cooked Kirkland bacon from Costco, and only used around 7 or 8 sliced bit it was still really good, and that bacon has way less cal/fat and sodium than real bacon with all the taste.

You can have your cake and eat it too. This is a yummy loaded potato dish and the only "diet" food is the butter. At just over 200 calories it is a wonderful comfort food and goes excellent with my 4 ounce filet mignon with no bacon.
