I just halved the sugar, replaced the shortening with applesauce, replaced all the white flour with whole wheat and it tastes great! I topped mine before baking with some currants and sunflower seeds, the loaves look like they belong in a bakery window.

I found that when I season the 'pot liquor' of my greens, it's too good to not eat, so I'm developing it more into a greens soup that can easily be adapted to be a one pot meal with some whole grain bread on the side.
