Mediterranean Chicken with Rosemary Orzo
Very Good 4.4/5
(36 ratings)

Cookbook creator says: LOVED THIS! It's now in the regular rotation. I did add the kalamata olives and the lf feta cheese on top. Amazing! One of the best things about this recipe is that you can add and subtract veggies to what you have on hand. Everyone in the family enjoyed this. Can't wait to make it again.

Slow Cooker Creamy Italian Chicken
Very Good 4.5/5
(1155 ratings)

Cookbook creator says: Very, very good! I also had to add some more liquid. I used the zesty Italian mix. This is a great base recipe to play with adding different veggies and seasonings, as well as varying what kind of starch or veggie you serve it over. Will definitely make again.

Oven-Baked Coconut Shrimp
Very Good 4.8/5
(38 ratings)

There is almost no fat in this recipe. Recipe can be doubled to 48-52 shrimp which is enough to feed a crowd! Cooking time is estimated depending on the size of the shrimp. Serve with pineapple or a fruit salsa.

Pong Pong Pork Chops
Very Good 4.3/5
(282 ratings)

Cookbook creator says: This was really, really good. The only thing I didn't add was the tobasco because I was afraid it was going to be too spicy. It wasn't spicy at all! Next time I will add it. I'm sure it has to do with what kind of hot mustard you use. Served with broccoli and steamed rice. Will make again!

This recipe is amazing! Time consuming, but easy, it rivals any gnocchi I have had in restaurants. Since each batch makes two meals, you can freeze half and they go right from the freezer to the boiling water.

Applesauce Oatmeal Muffins
Very Good 4.3/5

Cookbook creator says: These were really good. Very moist. I thought they could be a bit sweeter, so next time I will add a banana and/or craisins. I also think adding the vanilla to the oats is a good ideal. Will do that next time as well.
