This is one of my favorite breakfast options because it's easy and delicious! It's great for rebuilding muscles after a workout and has high fiber to keep you fuller longer. Enjoy my favorite breakfast food!

Random thing I made for a heavy dose of protein. Just grabbed some chicken breasts, 2 eggs, and a medium russet potato then tossed them in a skillet. Salt, pepper, and garlic powder to taste. Prep and cook time is just estimated.

I made this to suit my meal plan on the 6WBMO.
I'm a type B. My husband is a C. I get one serving, he gets two.
Counts as 2 oz meat
1/2 cup veggies if you're a B.

Serve over rice or spaghetti squash.

These are a great treat for a Sunday Brunch or you could make these ahead and freeze them, pop one out of the freezer when you are in a hurry and roll them up with cottage cheese and fresh fruit.

Loaded with fiber and with as much protein as a protein bar of shake, these will keep you full and satisfied for hours.

NOTE: I have a very large crepe pan (12") so if your pan is small you might be able to get 8 or even more crepes out of this recipe.
