This is my absolute favorite dish from Ruby Tuesday so I had to find a way to make it over. Its called the smokehouse chicken and it is a favorite by many! This delicious dish is high in fat and calories if ordered from the restaurant so I came up with a healthier, guilt free version that has become a favorite in my household!

Use 8 bell peppers--do not chop them! I could not find a listing for whole peppers on the recipe finder.

This is a great way to use roast left overs as well - I have added the roast beef cut up, left over mashed potatoes and like to save the gravy(I freeze it) but this is the basic recipe using good ol ground beef.

Peel and dice the cucumber and slice the tomatos in half. Add the olive oil, vinegar, basil and cheese. Toss. Then add salt and pepper to taste. This is the best Summer salad! Enjoy!
