Technically this is a crustless quiche, but the addition of flour makes for a delicious crusty bottom and sides.

My mom used to make this delicious version of French toast for breakfast when I was growing up as a great alternative for getting rid of overripe bananas. It makes regular French toast seem bland in comparison!

Try this dip on a toasted whole-wheat bagel at breakfast or with apple slices or whole-grain crackers for a snack. It's even good with carrots.

This comes out so moist, and you cut out most of the fat using applesauce.

My good friend gave me this recipe and it is amazing. The only thing I changed was that I put 1 cup ea of the nuts instead of 3/4 cup and switched the raisins to cranberries. My husband is sensitive to too much sugar and he suggested the switch to cranberries.

This homemade alternative to store-bought granola bars, is a good source of protein, fiber and healthy fats. Tasty and so simple to make! A quarter cup of raisins (not included here) also make a yummy addition!

Breakfast Quinoa with Blueberries
Very Good 4.3/5
(6 ratings)

Great high protein alternative to oatmeal. Found this recipe in Martha Stewart magazine. My new favorite breakfast. Takes a while to cook, but you don't have to stand over it. I make four servings without the berries, store three and add the berries to one to eat. Reheat in microwave. You can add more of milk, sugar, cinnamon or blueberries when you serve it -- but remember, that adds more calories and you don't really need it.
