My mom used to make this delicious version of French toast for breakfast when I was growing up as a great alternative for getting rid of overripe bananas. It makes regular French toast seem bland in comparison! This is excellent topped with a low calorie maple syrup or your favorite yogurt (I like strawberry). **Please note: I usually get my bread from a local bakery, so I did not include the bread in the nutrition values. My good friend gave me this recipe and it is amazing. The only thing I changed was that I put 1 cup ea of the nuts instead of 3/4 cup and switched the raisins to cranberries. Great high protein alternative to oatmeal. Found this recipe in Martha Stewart magazine. My new favorite breakfast. Takes a while to cook, but you don't have to stand over it. I make four servings without the berries, store three and add the berries to one to eat. Reheat in microwave. You can add more of milk, sugar, cinnamon or blueberries when you serve it -- but remember, that adds more calories and you don't really need it.
