I eat this when I'm having a craving for something satisfying, creamy, and sweet. Great way to curb your craving for cheesecake! The ricotta cheese is already a sweet cheese and has a great texture. This is a light, low fat, tasty, and best of all-quick to prepare snack or dessert.

I split the mix evenly on 9 tortilla shells, add the raisins, wrap them up in Saran Wrap and freeze. I then just take one out with an apple for lunch!

Simple and easy, this recipe is high in protein and fits in with my diabetic/no refined white diet. The cholesterol can be cut by using an egg substitute. I use a fruit only jam for the topping. I make the whole recipe and use the leftovers for breakfast the next day.
