This is a figure friendly way to indulge in potato salad and the flavor is absolutely divine. This salad can be served warm or cold and is great for a picnic (no mayo). I love creamy potato salads, but this one has such bold flavor, I don't miss the mayo (and neither does my waistline).

Using lowfat buttermilk and dry ranch dressing mix for big servings of tasty dressing - a serving would be 1/4 cup! I like a lot of dressing and don't care for vinegar all that much.

This is a fast, easy and delicious way to get in fresh raw broccoli. I adapted the recipe from the Whole Foods Broccoli Crunch Salad. The ingredients are simple and relatively inexpensive but they charge $8.49 a pound for it....much cheaper to make at home....and fresher.
