An easy crockpot or stovetop soup; just brown the ground turkey and add it to water and the other ingredients. Simmer an hour, or cook in crockpot on low for eight hours.

This is a healthy soup, with lots of vitamins and minerals, especially potassium and phosphorus. The phosphorus is important because most of us don't get enough.

Restaurant-style hot and sour soup, minus the sugar, corn starch and MSG. You can add whatever other vegetables you like (hot and sour soup usually has mushrooms but I don't like them). I usually add bean sprouts and brown rice and serve it as a complete meal.

This is a really yummy vegetarian soup which has no cream but is really creamy. It is a really great addition to the rotation and has a lot of flavor. It reads as a very basic vegetable soup but this is far from the usual!

Stopping in at a deli in a high-end grocery store, I was hungry for lunch and enticed by the smells coming from the soup and salad bar. This soup was new for me, and beyond delicious so I ran right home and looked up the recipe to try my hand at it!

My boyfriend is Ukrainian and grew up in Kharkiv, where fresh foods and soups - especially Borscht - are staples. And his mom is an amazing cook!
I spent a month and a half in Ukraine and learned a few dishes from her that I am tweaking at home to reproduce the flavor.

Here is my Ukrainian Borscht recipe - it is boyfriend approved.

Serve topped with a dollup of sour cream for an authentic experience! Yum!

This is a lovely, dark, meaty tasting dish without the meat!
This serves a crowd, with 9 generous half cup servings.

Try to find "French Green Lentils", as they are the best. I purchase mine at an organic grocery. If you cannot find those, then look for a small, roundish, green to brown lentil. Sometimes these are named just brown lentil. If you look closely however, there will be a greenish cast and these are much smaller and also more round than those you find in the one pound bags at the regular grocery store. These Lentils are so much better than those plain, flat, brown ones that you find everywhere. They take a little longer to cook, but are well worth the patience expended!
