The recipe posted on Whole Foods' website is over 600 calories per serving so I tweaked it a bit to make it lighter, plus I used canned chicken for convenience. I absolutely love the original and am so excited to get to make my own. I bet it is even better if you cook and cube your own chicken but I know I won't have time on a regular basis.

Tis is the very recipe used by Whole Foods Markets when they prepare their yummy chicken salad!

Crunchy celery, almonds and onions combine with bits of chicken in smooth mayonnaise and tangy mustard for an ideal lunch or light dinner sandwich. Avoid the stove, if you like, and use cooked rotisserie chicken, removing the skin and bones of course. Simply purchase a two-pound rotisserie chicken, which will yield about 4 cups of meat.

Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals...if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven't ever tried it with regular Italian dressing...let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking...it allows the juices from the chicken to really seep into the dressing.
