These muffins are delicious, especially on a cold fall or winter morning. Substitute apple sauce for some of the oil to make it lower fat.

4 large baked potatoes
½ cup 1% milk
1/3 cup (3 oz) 1/3-less-fat cream cheese, softened
½ cup (2 oz) crumbled feta cheese
2 T minced fresh or 2 t dried oregano
½ t salt
¼ t black pepper
¼ cup thinly sliced green onions
2 bacon slices, cooked and crumbled

Preheat oven 400
Pierce potatoes with a fork, bake for 1 hour or until tender. Cool slightly. Cut in half lengthwise, scoop pulp into large bowl, leaving ¼“ thick shells. Mash pulp with potato masher or fork. Add milk and cream cheese to pulp, stir with whisk. Add feta, salt, oregano & pepper and stir well.

Spoon mixture back into shells. Place on baking sheet and bake for 15 minutes or until thoroughly heated. Sprinkle each serving with 1.5 t green onions; top with bacon.

Yield: 8 servings (serving size 1 potato half)

Moist and delicious, this recipe uses only two ingredients. For a lighter flavor, use white or yellow cake mix and add cinnamon and nutmeg to desired taste.

This recipe is from the Washington State Dept. of Fish and Wildlife website. It's one of the best clam chowder recipes we have tried, and I was happy to see the calories aren't horrible! We use fresh razor clams from the Washington Coast--dug with our own hands! (usually in the rain and wind!--they taste better that way!)

Easy Microwave Recipe. Packed with nutrients. I heard Cayenne Pepper is great against colds. Strange it doesn't taste "hot" in this recipe. Cinnamon is great against Diabetes. The 2 spices gives it an exotic touch.
