Delicious, full of wonderful flavor and color. It looks complex, because of all the ingredients, but is really quite simple to make. I cook the chicken, pasta, peppers and sauce at the same time. If this is too much work, do in stages.Submitted by KEEYAHWE
This was very good and much easier than stuffing the cheese into the chiles, but with pretty much the same flavor of the traditional method. If you don't care for hot food, you could use plain Monterey jack cheese instead of the pepper-jack. For myself I added more pepper. Crock Pot - Comfort Food- cook for 6 hrs.
Ran into a similar recipe on a cooking website but made changes to accomodate what I had on hand and I fell in love. This dish is so filling and delicious, yet the lemon lime vinaigrette makes it so fresh and light as well. Yum!Submitted by TRESSALA
This recipe originally called for whip cream, olive oil, and regular swiss cheese. I substituted evaporated skim milk, spray olive oil, and 2% swiss cheese to reduce calories from over 700 to 351 per serving.Submitted by CHARRICE
This salad is one I created when I started a low-carb diet a year ago. You can cut down the carbs by lowering the amound of onions and peppers you use, or by eliminating the sour cream and amping up the salsa.
Anyway, I always crave fajitas, and this salad gives all the flavor without the calories or carbs you get in a tortilla.
Now that I'm not really counting carbs anymore I still love this salad because the flavor is so good, and it really doesn't take too much time to make. It's easy to double or triple when I have my husband or kids around, too, because it all cooks in the same skillet... and you can customize the amounts of cheese, salsa, etc., to each person's taste right in their bowl.

Slow cook on the stove stop. Uses all fresh ingredients. Adding this mostly due to it being a family favorite and not many others call for making homemade verde sauce. I also adjust the heat by leaving the seeds and ribs of one half of one jalapeno. Can also add 2 anaheim or poblano chiles for more heat. Submitted by TGIRL09
I modified this from the Ellen Show (10-05-10). Made it for the Superbowl and put it out with the "other" queso. It ran out first. It's a great faux cheese for nachos. The uses are endless. You can add anything to it... Don't forget to add your chips to your tracker. ;-)Submitted by AMBER353
