This crock pot (slow cooker) chicken stew is wonderful served with whole wheat biscuits. It would also be great with onions in it, but my BF is allergic and can only tolerate a small amount of onion powder. I use whold baby carrots because they are easy, but you can substitute large carrots, peeled & sliced.

Think chicken soup but better. It's a heavenly blend of subtle flavours that seem an unusual mix, but once they combine turn the humble chicken broth into a creamy, goodness-packed and satisfying soup. My favourite comfort food of all time.

I make this soup using the leftover carcass of a whole roast chicken (intact, with approx. 1 breast of skin less meat left on the bone). But if you are in a hurry you can use ready-made broth and a whole breast.

I vary the portions of vegetables in this soup depending on my mood (i.e., more carrots and less zucchini or vice versa). It's a delicious soup no matter what vegetables you put in it, and very low calorie as long as you stick with non-starchy vegetables.

This is an easy, healthy lentil soup. I listed he grams I used along with the measurements but the calories are calculated using the grams. This makes about 3 litres or so depending on how much water cooks down etc. The 12 sevings are equal to 1 cup or 250 ml.
The spices I used can be varried and you can add different ones as you like. I sometimes add more spices while it is cooking and we like a bit of heat so I add some chilli flakesas well. Some people leave out the cinnemon but it is traditional to use it. You can use some chopped celery as well when you are cooking the onions.
This is a soup so you don't need to use the exact amounts of ingredients listed.
Soup makes a great snack in between meals for about 100 cals per cup! Lentils are very filling and have lots of fiber.

A sqeeze of lemon really brings out the flavour.

A great soup for the crock pot. Easy to make, tastes great. Make extra and freeze in individual portions for fast frozen dinners.
