I bought some fresh peaches on sale and love oatmeal for breakfast for made this delicious breakfast. It's so hearty that I could only eat half. So, it makes two servings. My husband's Aunt makes this every year. It's delicious but a 2 oz serving is a doozie on the calories so watch out. So, I cut this down to each serving being only 1 oz. I've been making this hearty breakfast for years with my leftover apples. I love the nutty crunch and the sweetness of the apples and raisins. You can adjust the amount of raisins/nuts/apples to your liking, but remember to account for it in the nutrition. Walnuts are a super food so I wouldn't change the type of nut. I saw another user use Cheerios Multi-Grain as their base for a trail mix and decided to make my own mix because I love that cereal. I also calculated this w/out the Chex and adding 2 more cups of O's it comes out to 160 cal, 7.6 fat, 19.3 carbs, 3.7 fiber and 5.3 protein. Each makes about 6 C or 12 servings of 1/2 c each. I saw needed to use some expiring fresh corn tortillas and got this idea off of another user who made Corn Tortilla Chips with olive oil and salt. I saw a recipe for one with cranberries and orange zest or peal and love nuts. I searched for other crockpot recipes and couldn't find exactly what I wanted. I found plenty of pumpkin bread recipes and some that had whole wheat and used cranberries. I adjusted the sugar and this is what I came up with and it tastes pretty good. 1 oz is a small serving but if you pair it with other things for breakfast it's alright, besides the nutritions is great so you can eat more anyway! I got this from the Taste of Home website and man is it good. It is one of the lite desserts. Their ingredients yielded a little higher calories but not much. I got the basic recipe from Taste of Home. You are supposed to use 3 whole eggs and the 1 T is supposed to be lemon zest, but I never have lemon's on hand. I just use what I have. I reduced the sugar and I suppose you can use whatever sweetener you want. It's great on scones or with a plain cookie like macaroons. I got this recipe out of the Eat Up Slim Down book from Prevention Magazine. It calls for 1 t of coriander or ground cardamom, but I don't use either. I also use FF yogurt instead of Low Fat. I got this from a Taste of Home magazine and used Wholewheat bread and reduced the butter and sugar. My husband loves it. You make it ahead of time and let the bread soak up the milk mixture. It's heavenly with some sausage (not in the nutritional info). I used 15 slices of bread so 1 serving is 1 1/2 slices of bread. I got this marinade from The 30 Day Gourmet book and cut out the ginger. I also used unsweetened pineapple juice and fat free italian dressing. Their version of Lite was 299 calories and 15 g of fat so I guess the pineapple juice really helps. This can be frozen as well. I saw a SP recipe for using soda and Devil's Food Cake, pumkin and Devil's Food Cake and upon shopping for the devil's food cake I noticed the calorie count on the brownies, so I decided to try this. Without the walnuts it's 55.8 cal, 1.1 fat, 12.8 carbs, 1.2 fiber and .8 protein. I put it in my 9 x 13 dish and made 24 pieces. I just changed the apple butter to 3 tablespoons of applesauce. My kids loved these. My 3.5 year old son ate 2.5 of them with a little light whipped cream, cinnamon and walnuts on top.
