Cookbook creator says: To add more nutrition to this recipe, I added oats,tomato sauce and an egg to the mixed of meat. I brown them on a frying pan and in oven to finish cooking. (the juices of the meat are seal in the burger this way)

If you haven't tried Herbes de Provence, you must. This recipe uses them wonderfully. Delicious, healthful, easy, and can be varied to suit what you have or like. A real crowd-pleaser. Hearty and suits most special dietary needs.

Pizza lover like me.... Man I can still enjoy the great taste without all the CRAZY cal's. Plus you get more bang for you cal going this route.

Each serving is a 6 ounce slice of eggplant, plenty of food.
