From the 500 Low Carb Recipe book by Dana Carpender...Fast, easy and very healthy! Great for those watching carbs, gluten, and sodium. Parmesan give lots of flavor so no additional salt is needed.

This is our version without the corn tortillas. The carbs are low enough to be doable if you're doing low carb. It comes out a little saucey, but you can serve it on a bed of shredded cabbage and garnish with black olives and salsa. Just make sure you add those in on your food planner. This was made as a big family size dish and could be scaled down.
