Adapted from The Vegan Table by Colleen Patrick-Goudreau, this is a delicious vegetable dish that anyone will enjoy. The original called for tamari and rice vinegar, but I used Bragg Liquid Aminos and white balsamic vinegar instead. Serves 6.

Modified from "Practical Vegetarian Cookery." Their insane recipe asks for 1 1/4 cups of olive oil. I found 1/2 tbsp. to be sufficient.

This is very good and completely raw - my husband prefers that it have a little more water so if you like yours smoother add more water up to a cup. As is the recipe with yield 4 half cup containers worth. each containter has two servings approximately.
