This is my version of a recipe available on the Alberta Egg Board’s website. It’s a delicious, light and moist cake, and one that you can serve for dessert one evening and for breakfast the next day!

Chocolate Flax Muffins

These are so moist and chocolatey I can't believe they are so healthy. They are a very filling and a great low carb treat.

I buy pre-ground flax meal, but you can grind your own.

I grind my almonds in a blender by putting only a small handful in at a time and pulsing the blender. Don't run continuously or you'll have almond butter. You can also buy pre-ground almonds.

This is a crunchy treat that takes 10 minutes to prepare. Not only are these raw cinnamon balls delicious, but they will give you energy. They make a great snack in the afternoon when your blood sugar is plunging. The protein in the almonds, combined with the brain stimulating raw cacao and the blood balancing cinnamon will give you that needed lift.

Rustic Pumpkin Cheesecake
Very Good 4.5/5
(2 ratings)

Cheesecakes baked without ricotta are sub par in my opinion, so I came up with this recipe after much experimenting.

"Rustic" in this case means there is no water bath, no effort to make it look perfect. It looks and tastes like it's been baked by "a hippie in the mountains of Vermont"

The original version of this cake has 35 grams of fat per slice when whole fat cheeses and when a lot of butter is used. This version has 14 grams of fat yet does not compromise creaminess, firmness, and taste.

Gluten free indulgence. I allow myself one serving as a snack, once a day. When I make a whole one, I give half away to a friend who has celiac to reduce my tempation. I often reduce the amount of sugar in my recipes, too, thus reducing the carbs somewhat.

Developed this when trying to make meringues (or as my kids call them - meringuatangs...) Topped with sliced berries makes a wonderful gluten free shortcake.

This is a very easy cheesecake done in my Magic Bullet. It's not a graham cracker crust but a pretty good substitute!
