I found this recipe on a cooking site and modified it a bit to make it totally clean - it sounds a bit wierd, even smells a bit funny while cooking, but OMG, it tastes AMAZING!! The original recipe doesn't call for black beans and corn, but I added them, and I also omitted the cheese and sour cream that it called for to put on top after this is cooked - it still tasted delicious!

I ate this at the retirement center's kitchen. I know they do not use premium high-fat ice cream. I did not locate an entirely suitable ice cream in Spark's database, so I mixed a low fat ice cream and a regular ice cream.
