Dice all veggies and potatoes, brown chicken adding in the peppers and onions (choped vegg) untill tender chrisp.
Add tomatoes, peas and potatoes and spices to taste.
Bring to a simmer and cook 25 min. Add water if the sauce gets to thick, it should have the consistency of chili.
Serve over brown rice or whole wheat couscous.
