Cookbook creator says: This is a very good recipe. I made it increasing the coconut to 1/2 cup, otherwise, followed the recipe as written. The only other thing I need to comment on is that I only got 12 muffins from the recipe and I really had to stretch the batter to get 12, you may get 16 using mini muffins.
